Rigatoni with creamy mushroom sauce...

Here you go, Mrs. Day!

1 pound rigatoni pasta
2 tablespoons olive oil
2 shallots, minced
1 garlic clove minced
Salt and freshly ground black pepper
1 pound assorted mushrooms (Such as cremini, shiitake, or button) Clean and sliced.
1/2 cup dry white wine
1/2 cup vegetable broth
1 cup (8 ounces) mascarpone cheese, at room temperature.
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped chives

Bring a large pot of salted water to boil over high heat. Add the pasta and cook, stirring occasionally, until tender but still firm to bite, 8 to 10 minutes.

Meanwhile, heat the oil in a large skillet over medium-high heat. Add the shallots and garlic and season with salt and pepper. Cook until soft, about 2 minutes. Add the mushrooms and season with salt and pepper. Cook, stirring occasionally, until the mushrooms are tender, 5-7 minutes. Turn the heat to high. Add the wine and cook 3 minutes, or until all the liquid evaporates. Add the broth and simmer until the liquid is slightly reduced.

Remove the pan from the heat. Add the mascarpone cheese ans stir until creamy. Drain the pasta, reserving about 1 cup of the pasta water, and transfer to a serving bowl. Add the mushroom mixture and the Parmesan. Season with salt and pepper and toss well to coat the pasta, adding the reserved pasta water, if needed, to loosen the pasta. Garnish with the chopped chives.

It is so easy to make! I loved mascarpone cheese, this was my first time ever using it.

Summer fun!!!

Sorry that none of these pictures are in any particular order, but you get the idea of what we have been doing so far this summer. Papa Steve got another new plane so we went to Colusa and helped him clean out his old hanger so he could fit both planes into one hanger unit. Georgie had a blast and loves airplanes. When she sees a plane in the sky she says, "papa". I can't wait to fly to the coast for crab this summer, the new plane fits 6 so now we can all go places together.

Paige, Georgie and I went to SF to visit Liv Love! It was such a fun day, and it was nice to spend time with my close friends and get caught up on life. Georgie loved the baby and Liv Love is absolutely beautiful. Lindsey is seriously so patient and motherhood comes so natural to her.

My beautiful niece had her dance recital and she did a fabulous job. Georgie can't wait to start dancing now. It was so darling because she kept signing for "more" because she didn't want the dancers to stop dancing once their performance was over. I thought it was pretty cute. I can't get over all the talent and how good everyone was. After the show we all went to ice cream. Mary of course wanted pink ice cream.

Sunday we went to NASCAR in Sonoma! I know, so hard to believe that I am a Nascar fan. We had a wonderful time. The weather was perfect and it was so fun spending the day with Steve. This was my fourth year going and it gets better and better each year. The boys go all out and take Nascar so serious.

Friday we leave for Tahoe for a week. I'm so looking forward to relaxing on the beach and being with my family. Hope everyone is having a wonderful summer so far! Have a safe and happy 4th as well.

I could hold her all day long... Nothing else in the entire world that I would rather be doing.

She can blow some serious bubbles people! Sometimes she can't help herself and has to lick the stick and spills the entire bottle of soap on the ground. Whoever thought of no spill bubbles was a genius! We blow bubbles every night and look for airplanes and of course the black cat who lives in our neighborhood.

She is obsessed with bubbles!

Excuse my dead plant:( She gives me at least 50 kisses a day! Or an eskimo kiss.

We have been going to the park almost everyday and just relaxing! What is everyone else doing? We have a few trips planned to Tahoe, Reno and the city. I love just being home with my baby and family. I have been a cooking fool as well. If you love mushrooms, I have the best pasta recipe.

Happy summer everyone! It hasn't really felt like summer here in Yuba, but today it was such a beautiful day. I have felt so silly because I'm in shorts one day and then winter clothes the next. Hopefully summer is here to stay. I have been trying to fight this silly cold and just not feeling like myself. I have been busy with birthdays, new babies, fundraisers, and just life! I'm ready for summers in Tahoe, BBQ's, the smell of tanning oil, hot summer nights and pool parties! Bring on summer!!!
